Adapted from a recipe found on Allrecipes.com

Scone

Ingredients:

  • 3 cups all purpose flour
  • 1/2 cup white sugar
  • 5 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup butter
  • 1 egg, beaten
  • 1 cup milk
  1. Preheat oven to 400 degrees F.
  2. In large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened.
  3. Turn dough out onto a lightly floured surface and knead briefly. Roll dough into a 1/2 inch thick round. Cut into 8 wedges, and place on baking sheet.
  4. Bake 15 minutes in the preheated oven, or until golden brown.

Note: I brush a touch of melted butter and sprinkle turbinado sugar (raw sugar) on the top of each scone just before baking.

Food porn: French Breakfast Puffs

P184

Made these for breakfast this morning. The recipe came from an old Better Homes and Gardens cookbook.

1-1/2 cups flour
1/2 cup sugar
1-1/2 tsp. Baking powder
1/4 tsp ground nutmeg
1/8 tsp. salt
1 egg
1/2 cup milk
1/3 cup melted butter

Topping:
1/4 cup sugar
1/2 tsp. ground cinnamon
3 tbsp melted butter

Heat oven to 350 F

In a bowl, stir together flour, sugar, baking powder, nutmeg, and salt.

In another bowl, combine milk, egg, and melted butter. Add to flour mixture, stirring just until moistened (a few lumps should remain).

Grease and flour a muffin pan and fill each cup 2/3 full. Bake at 350 for 20-25 min, or until golden brown. While they are baking, prepare topping: combine cinnamon and sugar in one bowl, have melted butter in another.

When done, transfer puffs to cooling rack and immediately dip tops into butter, then cinnamon sugar mixture. Serve warm.
